Double Oaked Whiskey — Rich, Smooth, Deeply Layered Flavor

This Double oaked whiskey is aged first in an ex-bourbon oak barrel, then transferred to a second charred new oak barrel to finish aging. This secondary maturation adds concentrated vanilla, caramel, and toasted oak notes, producing a sweeter, rounder, and more complex spirit than single-barrel-aged whiskey.

Key Flavor Profile

  • Aroma: Warm vanilla, baked caramel, toasted oak, light baking spice, and subtle dried fruit.

  • Palate: Creamy caramel and butterscotch up front, deep toffee and dark chocolate mid-palate, with toasted oak, nutmeg, and baking spice accents.

  • Finish: Long, smooth, and slightly lingering with oak tannins, caramelized sugar, and a gentle spice warmth.

Why Double Oaking Matters Double oaking intensifies wood-driven flavors while softening harsh ethanol bite. The second barrel—often lightly toasted or heavily charred—interacts with the whiskey’s esters and congeners to develop richer color, fuller mouthfeel, and layered complexity. The result appeals to whiskey drinkers who prefer sweeter, sweeter-wood-forward expressions without sacrificing balance.

Tasting Notes and Serving Suggestions

  • Neat: Best enjoyed neat in a tulip or Glencairn glass to appreciate aroma and finish.

  • With Water: A few drops of water open floral and fruity top notes.

  • Cocktails: Adds depth to stirred spirits cocktails such as an Old Fashioned or Boulevardier, or use as a luxurious base for a whiskey sour.

Food Pairings

  • Dark chocolate and caramel desserts

  • Grilled or smoked meats (pork, short ribs)

  • Aged cheeses like Gouda or Manchego

  • Nut-forward baking (pecan pie, almond tart)

How Double Oaked is TRADITIONALLY Made! Note — for this style, check out our Double Oaked Straight Bourbon

  • Primary aging: Whiskey matures in new charred American oak, extracting vanilla, caramel, and oak tannins.

  • Rerack: After initial maturation, the spirit is transferred to a second barrel—often toasted or differently charred—to extract new flavor compounds and mellow rough edges.

  • Finish time: Secondary aging can range from months to years depending on desired intensity and balance.

How Sabbatical Double Oaked this Batch:

  • Primary aging: Whiskey matured in new once-used Bourbon American oak cask, extracting delicate and subtle flavors while opening up with oxidation through the barrel over 6+ years.

  • Rerack: After initial maturation, the spirit is transferred to a second barrel—brand new freshly charred american oak barrel—to extract new flavor compounds of sweet vanilla, honey and caramel as it continues to mellow rough edges.

  • Finish time: Secondary aging took place for over 1 year in a new oak barrel

  • Forget what you know and discover how a new take on Double Oak has crafted a superbly bold yet delicate whiskey that goes down easy.

Double oaked whiskey offers a lush, wood-forward drinking experience with amplified sweetness and depth—ideal for sipping and for elevating classic whiskey cocktails.
