When Botanicals Meet Oak: Everything You Need to Know About Barrel-Aged Gin
If you ask most people to describe gin, words like crisp, piney, botanical, or bright usually top the list. Gin is traditionally known as a clear, unaged spirit where juniper and citrus take center stage. But what happens when you take those lively botanicals and let them rest inside charred oak barrels?
You get Barrel-Aged Gin—one of the most exciting, complex, and emerging categories in the craft spirits world. Bridging the gap between a bright botanical gin and a smooth, mellow bourbon, barrel-aged gin offers a drinking experience unlike anything else on your bar cart. One fun fact: until recently due to the federal government (TTB) requirements on allowable language that can be included on spirits labels, you couldn’t even find a product labeled as “AGED” gin! Longstanding rules did not recognize “aging” as an acceptable process in the gin production life cycle and because of this, you’ll find older vintages of the same types of products released using descriptions like barrel “rested.” Luckily, the TTB realized it was just fine to describe a product that was AGED in wood barrels as…. aged, and here we are!
Here is a breakdown of what barrel-aged gin is, why it’s captivating whiskey and gin drinkers alike, and a look at our newly released Sábado Barrel Aged Gin.
What Exactly Is Barrel-Aged Gin?
At its core, barrel-aged gin begins life like any craft gin: neutral spirits distilled with juniper and a selection of herbs, spices, florals, and citrus peels. In our case, 13 hand selected botanicals inspired by our island farm location in California.
However, instead of bottling the spirit right after distillation, we decided to fill a handful of ex-bourbon and charred new oak casks and see where it went. The answer was quickly: this is going in a great direction! During its time in the wood — which can range for a few months to a year — two magic transformations happen:
Flavor Integration: The gin extracts compounds from the wood, absorbing notes of vanilla, toasted oak, baking spices, caramel, and subtle smokiness.
Mellowing & Mouthfeel: The natural tannins in the wood round out the sharp bite of alcohol and botanicals, giving the gin a richer texture, a softer mouthfeel, and a warm golden amber hue.
The result isn’t just a gin, and it isn’t quite a whiskey—it’s an entirely new territory of flavor where bright citrus and punchy botanicals meet a soothingly sweet oak backbone.

At Sabbatical we love pushing boundaries while honoring craft tradition. To craft this unique release, we started with our award-winning New American Gin—Sábado—and took it on a journey through barrel maturity. That’s why we’re thrilled to introduce our debut release: Sábado Barrel Aged Gin.
The Craft Process
The Casks: We rested our gin in a marriage of ex-bourbon and charred new oak casks. The ex-bourbon barrels impart soft vanilla and caramel, while the charred new oak delivers structural depth and sweet wood complexity.
The Aging: The spirit matured over a period of 6 to 16 months, allowing the wood and botanicals to reach a harmonious balance.
The Proof: Bottled at a robust 94 Proof (47% Alc/Vol), ensuring that every botanical detail and oak note shines through clearly, whether enjoyed neat or mixed.

On the nose, you'll immediately catch bright citrus wrapped in warm vanilla and light wood smoke. On the palate, vibrant botanicals mingle with a soothing, sweet oak backbone—falling effortlessly somewhere between a rich craft gin and a light bourbon.
How to Drink Sábado Barrel Aged Gin
Because barrel-aged gin sits at the intersection of dark and clear spirits, it’s remarkably versatile. Here are a few ways to enjoy it:
Neat or On the Rocks: Pour 2 oz of Sábado Barrel Aged Gin over a large ice cube. Allow it to sit for a minute to open up the aromas, and sip it like a fine bourbon.
